みりん醸造家

1966年、みりん製造業の3代目として愛知県碧南市に生まれる。家業を継ぐことに反発して東京に進学し就職するも、家業倒産の危機に自分の意に反し跡を継ぐことを決意。瀕死の会社を立て直そうと奮闘する中、初代である祖父が残した昔ながらの本物の「三河みりん」(三河地域の本みりん)のレシピを発見。会ったことのない祖父のレシピに会社の再起を賭け、見事に復刻に成功。現在はみりん本来の調味料としての使い方だけでなく、砂糖ではない自然の甘味料としてデザートなど新しい分野での「みりん」の可能性を広げるために精力的に活躍の場を広げている。

Mrin(Japanese sweet sake) maker

In 1966, he was born as the third successor of Japanese sweet sake ‘mirin’ maker in Hekinan, Aichi, Japan. Not wanting to follow his destiny, he went far away from home for a university in Tokyo and started working there. However, since his father was about to go bankrupt, he decided to succeed in the company against his will. While fighting and struggling with a dying company, he unexpectedly found a genuine ‘mikawa-mirin’ (pure mirin originally from Mikawa region) recipe written by his grandfather, the founder of the company. Believing in this miracle for the company’s comeback, he reproduced his grandpa’s original ‘mikawa-mirin.’ Now he energetically promotes his ‘mirin’ not only as a traditional seasoning for Japanese cuisines but also as natural sweetness without sugar for various possibilities.
